Trail Mix Energy Bars (No Oven!)

Ingredients

  • 1½ cups rolled oats

  • ½ cup natural peanut butter or almond butter

  • ⅓ cup honey or maple syrup

  • ½ cup mixed nuts (chopped almonds, cashews, walnuts)

  • ⅓ cup dried fruit (raisins, cranberries, chopped apricots)

  • ¼ cup dark chocolate chips or mini chocolate chips

  • 2 tbsp chia seeds or flaxseeds (optional)

  • 1 tsp vanilla extract

  • Pinch of salt


Instructions

  • In a saucepan over low heat, stir peanut butter and honey until smooth.

  • Remove from heat, stir in vanilla and salt.

  • In a large bowl, combine oats, nuts, dried fruit, seeds, and chocolate chips.

  • Pour the peanut butter mixture over dry ingredients; stir until coated.

  • Press mixture firmly into a lined 8×8-inch pan.

 

  • Chill for at least 1 hour; cut into bars and enjoy!
