1½ cups rolled oats

½ cup natural peanut butter or almond butter

⅓ cup honey or maple syrup

½ cup mixed nuts (chopped almonds, cashews, walnuts)

⅓ cup dried fruit (raisins, cranberries, chopped apricots)

¼ cup dark chocolate chips or mini chocolate chips

2 tbsp chia seeds or flaxseeds (optional)

1 tsp vanilla extract

Pinch of salt
Instructions

In a saucepan over low heat, stir peanut butter and honey until smooth.

Remove from heat, stir in vanilla and salt.

In a large bowl, combine oats, nuts, dried fruit, seeds, and chocolate chips.

Pour the peanut butter mixture over dry ingredients; stir until coated.

Press mixture firmly into a lined 8×8-inch pan.

Chill for at least 1 hour; cut into bars and enjoy!
