No-Bake Pineapple Cream Dessert

For the Crust:

  • 2 cups crushed graham crackers or vanilla wafers

  • ½ cup unsalted butter, melted

  • 2 tablespoons sugar (optional)

For the Pineapple Cream Filling:

  • 1 can (20 oz) crushed pineapple, drained well

  • 8 oz cream cheese, softened

  • ½ cup powdered sugar

  • 1 teaspoon vanilla extract

  • 2 cups whipped topping (or whipped cream)


Instructions

1. Prepare the Crust

In a bowl, combine:

  • Crushed graham crackers or vanilla wafers

  • Melted butter

  • Sugar (if using)

Press the mixture firmly into the bottom of a 9×9-inch baking dish or glass pan. Use the back of a spoon or flat-bottomed cup to smooth it evenly. Chill while preparing the filling.

2. Make the Pineapple Cream Filling

In a mixing bowl, beat together:

  • Softened cream cheese

  • Powdered sugar

  • Vanilla extract

Once smooth, fold in the drained pineapple and whipped topping until fully combined. The mixture should be light, fluffy, and tropical-smelling.

3. Assemble the Dessert

Spread the pineapple cream filling evenly over the chilled crust. Smooth the top with a spatula.

4. Chill

Refrigerate the dessert for at least 2 hours, preferably 4 or overnight, to allow it to set and firm up.

5. Garnish & Serve

 

Top with additional whipped topping, pineapple chunks, or toasted coconut before serving. Cut into squares or slices and enjoy chilled.
